- 500 grams of fish (snapper, cob, or according to taste), cut into pieces
- 5 shallots, thinly sliced
- 3 cloves of garlic, thinly sliced
- 5 red chilies, sliced oblique
- 5 bird’s eye chilies (according to taste), sliced obliquely
- 1 knuckle ginger, thinly sliced
- 1 knuckle galangal, thinly sliced
- 1 knuckle turmeric, thinly sliced or you can use turmeric powder
- Lime leaves to taste
- Basil leaves to taste
- 200 ml of coconut milk
- Right amount of oil
- Salt to taste
Steps:
- Heat some cooking oil in a large skillet.
- Sauté shallots, garlic, red chilies, bird’s eye chilies, ginger, galangal, and turmeric until fragrant.
- Put the fish in the pan and mix well with the spices. Let the fish change color a little.
- Pour the coconut milk into the pan. Stir well and let the spices seep into the fish.
- Add lime leaves and salt according to taste. Stir again to even out the spices.
- Cook until the fish is perfectly cooked and the gravy thickens.
- Finally, add basil leaves. Stir briefly and turn off the heat.
